Black Pudding Mix

A great tasting mix with traditional flavours to create a perfect black pudding. For best results, we recommend you use pork back fat. This mix is a pre-mix of both seasoning and rusk.

Features:

• Pre-mix of seasoning and rusk
• Usage 27.5% mix + 12.5% diced black fat + 60% water
• For every 1.25kg of mix, 10lb of black pudding is produced

Instructions:

• Pour the water into a mixer/blender and add the black pudding mix
• Blend the mix until hydrated and it begins to thicken
• Blanch or add the back fat in its raw state to the hydrated pudding mix
• Fill into Butchers Sundries natural or synthetic casings and allow the mix to thicken overnight
• Steam or water cook at 175f (80c) to an internal temperature of 160F (71c)
• Cool and store under refrigeration * must be firm/hardback fat
• NOTE - Care should be taken not to over mix as this will result in a very firm blend. Using bacon trimming in place of back fat can give an acceptable savoury alternative if you do not fancy pork back fat. Store this product in a cool, dry place. Once opened, store in an airtight container such as a sandwich box and out of direct sunlight.

Ingredients: Rusk (Prepared from Wheat Flour, Salt), Barley Flakes, Haemoglobin Powder, Salt, Dried Onion, Onion Powder, Spices, Herbs, Flavourings, Dried Blood, Stabiliser (E451(i)), Hydrolysed Vegetable Protein (contains Soya).
